I've watched every episode of TOS, TAS, TNG, DS9, VOY, ENT, and I've watched every movie except for Beyond. I also like reading non-fiction behind the scenes Star Trek books. I guess you could say I'm a fan.

I forgot about books. I bought a .50 book from a yard sale once. It was pretty good, it was called: Star Trek - Probe. It dealt with that same Probe from the movie The Journey Home, that was trying to communicate with the extinct whales.

I've read a couple of the Star Trek fiction novels, most recently I, Q, but I mainly prefer to stick to non-fiction. The reason for this may seem trivial, but whether something is Star Trek canon or not matters to me.

My earliest memory is of watching the original as it aired with my family. I was a Trekkie before Trekkers were invented.
I have watched every episode of every show (including the cartoon) at least 4 or 5 times except the original show. I've seen every TOS episode at least 10 tens (maybe more). There was very little TV worth watching throughout the 70's and I could only rewatch Six Million Dollar Man and Bionic Woman once or twice.
I've seen every movie at least twice (4 or 5 times for 2&4) except the last two nightmares by Jar Jar Abrams. Those I could only watch force myself to watch once (just to maintain my knowledge base). The movies are second to the TV shows anyway.
I've read 20 or 30 books but they don't count.
Went to my first convention in 1977. I won the Star Fleet Battles tournament at GenCon South in 1981. An extremely complex strategy game for ship to ship combat.

TOS- EVERY episode numerous times since 1966
TAS- Saw them all when they were first broadcast but haven't seen them since. Thinking about gifting the blu-ray set to myself for Christmas.
TNG- There's possibly an ep I haven't seen. But more likely than not I've seen them all, at LEAST a couple of times each.
DS9, VOY & ENT- There're a handful of each eps from each of those series I've not seen. Looking forward to seeing them, though. I actually like the idea of still having them discover (no pun intended) as well as the new show next year.

I've seen every movie and all 5 series every episode multiple times. I wish I could see some of them for the first time again they are so good. I just went through the newest series ENTERPRISE and had forgotten so much since it has been a decade since it came out. It was fresh and great all over again. T'Pol was my fave character in that series. Spock & Scotty make appearances in some of the newer series. Original was great but do yourself a favor and watch the other series. They all get better as they progress if you give them a chance.

Really good list. I'm about 90% in line with you. It's interesting because so many of the more mature Trek fans (like you or me) did not think as highly about Voyager or Enterprise.
Enterprise did a great job with T'Pol and the Vulcans in general. We're also in a relatively small group of people the liked the intro music. I have to say I was mostly neutral about the intro as it aired. When I rewatched everything 2 years ago I found I really liked it.
As for Voyager, I think I have more favorite episodes from Voyager than any other. Your whole list to start (great episodes). One that you don't have on the list but is high on mine is Shattered. Voyager had many good Borg episodes and some of the best time travel/alteration episodes.
Seven was an outstanding character. I have a hard time choosing between Data and Seven as my favorite. It's not because she was a babe (that didn't hurt). Many of the best characters (for me) Data, T'Pol, Seven, and Spock, had to do with examining what it is to be human from different prospectives.
Always good to meet a fan with very similar tastes.

I've never been interested in any Star Trek beyond the original series, though I've seen one of the subsequent movies.

I've DVR'd a few reruns of the 'Next Generation'.
I'm just trying to check out a few to see if I can get into this old series. I think the Enterprise is weird looking the way they've totally changed the way it looks and it is really cheap looking CGI so I don't like that.
The episode I've watched so far was where some orb of light comes into the ship and gets this woman pregnant. She gives birth and the boy grow to the age of ten or so in like one day. The radiation he emits ends up causing an emergency with some life forms they are trying to store as cargo and transport on the ship. The boy "dies" and turns back into an orb of light and leaves.
I've got a few more episodes to watch. I'm not hooked yet but I'll check out some more.

You gotta know that most people that frequent these ST boards have seen everything and anything ST, probably multiple times.
There are a few movies I can't stomach. ST:The Final Frontier and ST: Beyond are unwatchable.

I have seen every episode of TOS, TNG, DS9, and VGR at least 20 times each, some maybe 40 times. I can lip sync the dialogue! I have seen the entire ENT series about five times and plan to watch it more times.
I have seen every movie about three times each, except the "new" ones. I've only seen the first two of those twice and have not yet seen Star Trek Beyond because I'm waiting until I get an LED TV.
I vaguely remember watching a few episodes of the animated series when I was a young child but never watched it as an adult. I have not read any of the books.
I watch and/or talk to someone about and/or think about Star Trek almost every day and have so for the last 30 years. It's therapy for me as I have a high stress life of poverty and serious illness. It's one of the few escapes I have. Many times, I've calmed myself down just by watching Star Trek.

I was very young (introduced by one of my parents, can't remember which) when first watching TOS, because I remember watching ST II when it first came to HBO (which would be about a year after its release), and I knew what was going on well enough to cry at the end, and I would've been about 4 or 5 years old, so by then, I'd probably seen all of TOS
at some point not long after, caught TAS

was a snob about TNG for the longest time, refused to watch it
(I don't remember exactly where, but somewhere in here, I was able to watch the films as they came to free tv, though not in order, I think III was the last one I was able to see, of the TOS people's ones)
started to watch some of VOY & DS9 (in syndicated reruns), random eps, if the teaser segment at the beginning was compelling enough, I really only enjoyed the theme music, but I'd stick around if it seemed good, that would've been around 2000 (still not having watched any of TNG, save possibly "Unification I & II", because Spock was in them)
realized when watching above, that VOY was still running new eps, so 'jumped into' that series, near the end of its run, probably mid-way through season 7
then, in 2001, specifically, October 1st, 2001 (100101, as the ads read), then-TNN, now SpikeTV started airing TNG, and I decided to give it a try, have watched that series through a couple of times, specific eps, many times more
watched the first season, maybe some of the second, of Enterprise, in first run, gave up when it got serial, and I fell behind, got back into it a little in the fourth season, thanks for making it so much better for a bit, Manny Coto

I saw the original show in the 1960s when it first aired. I bought the Blish books and later watched the animateds and bought the Foster books on those, also a few of the Gold Key comic books. I had some of the Star Trek Enterprises/Lincoln Enterprises catalogues and later got into the Nimoy fan club and bought some zines, which I still have. Also my IDIC.
I saw all the movies in theaters with my mother and later my in-laws. I got all the way through TNG and Voyager. I adored Captain Janeway, but was put off by 7 of 9 for a number of reasons (summarizing: I felt she was a gimmick). I have tried several times to get into DS9, perhaps I'll try again.
I saw the first episode of Enterprise and when Jolene Blalock showed up in practically that same outfit, again it felt gimmicky. I was not sure about the way the Vulcans were portrayed either but I gave it a chance anyway. About eight episodes in I quit. I do want to go back though and see the episodes where Kara Zedicker plays T'Pau. That's a demanding role and I want to see how she handles it.
My first impression of Discovery was good, I loved the actresses and I thought the idea of showing the early days of Starfleet and the Enterprise and everything was great and I was even willing to put up with the grotesquely re-re-redesigned Klingons. What put me off was the choice to include wowee special effects rather than sticking with continuity (as, say, Enterprise really had for the most part) and the usual "dark, grim and gritty" stuff.

How much of the Star Trek universe have you watched?
I was a little kid who grew up in the 70's and every Sunday they'd air a rerun of Star Trek and I'd usually watch it. I was a little kid fascinated by outer space and Star Trek was about that. I really wanted space duels and dog fights and cool aliens, ST offered that a little but it was mostly plot and the effects were cheesy. ST wasn't even in the same universe as Star Wars when I saw that.
As I got older and saw the films I thought they were nice. In my 20's I started catching reruns and really getting into the science and the plots that they were experiencing. When I saw the Wrath of Kahn as a kid I thought it was ok but it wasn't until I got older that I felt that it was a great film.
For whatever reason I've just never had the interest or taken the time to watch any of the newer shows that have come out in the 90's or following decades. I've only seen the films up to number VI Undiscovered Country. I did see Star Trek (2009).
I love the original cast but never got into any of the other series.
What is the background with everyone else?
