this is a sin! no real scotsman (i hope so, I am sadly not) would ever drink iced scotch...

One piece of ice is considered to be okay in some parts; but really you should only add a little water.

The old guard would be insulted if you put any ice in the drink and it has been rumoured that certain establishments and watering holes in Scotland will refuse to give you ice with certain brands of scotch. Glenmorangie would be one of those brands.

Is it true that adding water to the more expensive stuff can increase the flavor? I've only had inexpensive bourbon & scotch. I don't like how it tastes with ice and I don't like bourbon cold either.

Yes, they add a little water to lift the flavour. Usually the water is slightly warm.
