I'm not sure what your point is because your post is..oddly written. I don't believe the movie made Gia out to be some prisoner of the modeling world. She liked it to an extent but she didn't like the superficial aspect. That's not an unusual feeling that a lot of people have about their jobs.
I guess the jist of your post is why did Gia stay in modeling if she hated it so much. Again, I don't think she hated the art aspect but she couldn't reconcile the fakery. She also didn't walk away because it was easy money. One would be hard pressed to find any person who wouldn't stick with a job they didn't like because they made good money. Gia was young, had a limited education and seemingly had little work experience. What other job would she have done that would yield the same amount of money?
