I agree. If the whole thing was that it was made up as a way to cope with the trauma, how does it explain how she can see? I'm assume it will be covered in season 2, if there is one.

Having no certainty about the show one way or the other, I asked myself that and you know what? The answer was so obvious it didn't come to me before I saw the show a second time:
We don't know for sure she was ever even blind in the first place.
Think about it. Her adoptive parents got her from her aunt, long after the accident that "made her blind". They just accepted it. We have no clue they even took her to a doctor to get her sight checked. No GP would do a thorough exam, neurological or otherwise, without a good reason.
That could be part of her delusion from the start.

They seemed very diligent parents. I think that would be hard to sustain long term.

I agree. It would be extremely hard to maintain long term - especially for a child.

Hap hit her in the back of the head after she escaped and was standing on the edge of that mining pit.

It depends on what actually caused the blindness. If it was psychosomatic to begin with, it's conceivable that she could regain it.
