I've worked with phyllo pastry before. It dries up incredibly fast and I had to keep it covered with a damp dish towel with I was working with it.

What is edam? I first thought it was short for edamame, which I used to love nibbling on. What does the cheese taste like or can it be compared to anything?

Edam is a lower fat Dutch cheese. Like a mild cheddar, but better!

Not sure, I'm not very advanced and the recipes I've tried aren't always great, online and maybe better from a book usually.

This is really good! My Nana used to make the most wonderful ham and cabbage "stew", sometimes throwing in chopped up white potatoes or dumplings. Always one of my favourites.

Yea, I called it "ham stew," too! My mom and maybe dad would reiterate that to me when they were well.

I think we used to have a lot of potatos in is which I didn't like. I just had some dumplings at Cracker Barrel today, as a side dish.

Witchetty grubs. Tasty!

In the desert of the Australian outback, the roots of the witchetty bush hold a secret treat inside their rootsβ€”thick, white, thumb-sized worms. These are technically the larvae of the cossid wood moth. But they’re more commonly known as witchetty grubs, a staple of indigenous Australian diets.

Women and children, the primary harvesters of the grubs, unearth them from inside the woody roots of the witchetty bush (although they can also be found in the roots of the river red gum tree and the black wattle tree). The grubs are favored for being high in protein and easy to digest.

The grubs are traditionally eaten raw or skewered and barbecued. The latter results in a nice, crunchy skin. Many tasters liken the cooked grubs to scrambled eggs, while others say they have a nutty flavor when raw. Some even compare the flavor of barbecued witchetty grubs to chicken or prawns with peanut sauce.

The larvae have also begun to crawl into kitchens outside the desert. In bush tucker (indigenous cuisine) restaurants, witchetty grubs are usually served as a grilled entrΓ©e, alongside the likes of kangaroo tail soup, emu fillet, and flathead fish.
