Okay that's what I had assumed, but it seemed like it was something that wasn't human, because why else was Marti freaking out so much when that guy got stabbed? Or was she just generally horrorstruck at the violence? There were a lot of inhuman noises happening before the attack too

Since guest safety is so paramount, you would expect guests to be greater risk takers, at least when confronted with gunfire. Maybe the use of cutting weapons makes it appear riskier.
Since we don't know much if anything about the attackers, it's hard to know whether they pose the kind of existential risk we all kind of expect about malfunctioning hosts or whether this is just an extra-scary narrative.

I was wondering why she freaked out too and same for the guy just before that. All they were doing were shooting at him he knows he won't be hurt so why he so scared

When playing a horror narrative video game you know you won't get hurt. However, if the "Let's play" videos on YouTube are anything to go by people still get plenty freaked out, some to the point of crying. That's when just dealing with characters on a screen and headphones. If someone would get that badly freaked out in those situations why wouldn't some people become terrified in WestWorld?
It is a fully immersive experience and the actual risk of getting hurt has gone up. They show you the bullets can leave welts so who knows what the knives do. It makes perfect sense that the experience may become too much for people. That's why they offer the "Family friendly" stuff closer to town and the further out you go the more "dangerous" everything gets.

Believe me, if I was in the park I would be freaking out too, even though I knew it wasn't real and I couldn't get hurt. But she seemed like she was tougher than the other players they're with (like the guy who was fearful when they were being shot at). I just had a feeling that some kind of monster was going to come after them, so I wasn't sure when she said "oh my *beep* god" if she was seeing a monster or was just startled at seeing a man get killed.
I'm probably looking too much into this but I just wanted to know if it was significant that we know who or what attacked them. It was dark so I couldn't tell who or what it was.

I just had a feeling that some kind of monster was going to come after them, so I wasn't sure when she said "oh my *beep* god" if she was seeing a monster or was just startled at seeing a man get killed.
I think also that she'd been hearing stories about the gang all day, things like how Wyatt wasn't a man, but he wasn't a demon, or that the gang wore the flesh of people they killed, and she saw the bodies tied to the tree. Then when she's face-to-face with them, they were wearing masks, presumably fashioned out of 'dead people,' it's night, and she fell over a trip wire that got what she knows is a robot killed, but seeing something like that would probably freak you out even if you knew the guy you'd been talking to all day was a robot. Plus, it was down to just she and Teddy, and it was hard to see how many were there, but there were a lot more than two.
I'm interested to see if a lot of his gang is made up of humans, because Teddy's gun had no effect on them. If they are, then yeah, she should be scared, because who knows what they'd do to her if they've gone so far off the grid that they're ripping robots apart like that. Not quite a monster, but definitely enough there to be terrified.

I don't think they did. I read the name in a recap article and it's also mentioned in the cast list

To me, it looked like they were actually humans, because nothing happened to them when Teddy shot them after they surrounded him.

I thought the same thing. They were being shot and nothing happened to those creepy guys in masks and robes. They looked like they came from another world. Didn't fit in with the Western vibe.
